Easy Greek Salad
Greek Salad is one of my all time favourite meals, I love it. I usually top mine with shrimp, but when recommending it to friends my go to protein topping is chicken.
This makes about 3 lunches with a full chicken breast or 5 - 6 with smaller portions.
Easy Greek Salad with Chicken:
Ingredients:

1/2 cucumber
- 2 heads of lettuce, bitter head ie Bibb or Boston, red lettuce or iceberg or a combination
- 1 red/green pepper

1/2 medium red onion

Optional - cherry tomatoes (I do not like raw tomatoes so these never make it into mine)
- for the dressing
- 1/3 cup red wine vinegar
- 1 lemon, juiced (or 3 tbsp of lemon juice)
- 1 tsp Dijon Mustard
- 2 garlic cloves, minced
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup olive oil
- an extra tsp of olive oil to drizzle on the chicken
- pinch of salt, pepper, and oregano

3 boneless skinless chicken breasts

2 tbsp feta
Recipe:
- Preheat your oven to 400 F, season your chicken with olive oil, salt, pepper, and oregano
- Once the oven is heated, roast chicken for about 15-18 minutes depending on thickness or until fully cooked

Chop cucumber, red onion, peppers, cooked chicken breast

Mix olive oil, vinegar, dijon, salt, pepper, garlic, lemon juice

Add vegetables, greens, chicken to a large bowl (if making ahead for lunches, portion veggies, lettuce and chicken with feta into tupperware)

pour dressing, sprinkle feta, toss, serve (if making for lunch pour the dressing on just before eating)
