Easy Spring Tilapia Dinner

Spring is finally here, and I am so happy about it! The weather in Toronto has been nice enough a couple times to enjoy some outdoor walks/runs. I love tilapia, it is low calorie, not super fishy in my opinion and tastes like whatever I cook it with, you could almost call it the chicken of fish and it is a staple for me.
This is one my favourite weeknight meals, Tilapia with roast veggies and wild rice.
As a pro tip make a pot of rice on the weekend and then just re-heat a serving during the week. I try to make my weeknight meals be quick to make to minimize the chance that I will start snacking on something unhealthy.
Here is the recipe:

1 large piece of tilapia
- 1/4 cup of mixed mushroom

1 bundle of Asparagus

1tbsp and 2tsp of olive oil
- 1 clove garlic chopped

1 tsp of garlic powder

Salt and Pepper

Preheat your oven to 375°F

Place the asparagus in a baking dish drizzle with a 1tsp of the olive oil and season with pepper and a pinch of salt
- Season the tilapia, with salt, pepper and garlic powder
- Chop the mushrooms and the garlic
- heat a small pan on medium heat

heat a medium pan on high heat, once the pan is hot add the olive oil and the tilapia reduce the heat and cover with a lid. Place the asparagus in the oven
- heat the rice in the microwave.

Cook the fish until fully cooked (about 10 mins), roast the asparagus for the 10 minutes and let the mushrooms finish cooking removing from heat and covering if needed to keep the mushrooms warm while the fish and asparagus cook.

Serve hot, add hot sauce if desired
