Spicy Chickpea Salad Topper

I love chickpeas! (I feel like I say this about a lot of food, but I love food, so no surprise here). 

Chickpeas are a great source of protein and fibre! I love mine on top of salads especially once roasted as they double as my protein source and add a nice crunch! 

This easy spicy chickpea recipe will add extra flavour to any salad and makes for a tasty snack on their own. You can substitute  for other spices  you love as well. If you want this recipe  to be spicier,  you can simply add more chili powder. Enjoy! 

 

Ingredients: 

1 Can of Chickpeas rinsed and drained 

1 tsp olive oil

1/2 tsp ground cumin

1/2 tsp ground chili pepper/cayenne 

1/4 tsp of tumeric 

1/2 tsp ground black pepper

Recipe: 

1. Preheat your oven to 400 F. 

2. Rinse, drain and let the chickpeas dry a bit

3. Pour the chickpeas into a bowl, add the oil and the spices. 

4. Toss until all the chickpeas are well coated. Pour onto a baking tray 

5. Bake for about 15-18 minutes. (I find 15 minutes works perfectly for me makes them have a bit of crunch on the outside but softer on the inside)

Stored in an airtight container they will last a week. I make mine on Sundays and then just add them to my salad I make for lunch.
