Easy Weekday Omelette
Morning!
I love a good omelette! Light and fluffy eggs with vegetables and a little bit of cheese ? A perfect start to a morning in my opinion.
Omelette's are a great quick meal packed full with protein from the eggs, and sometimes a little cheese just to add a bit of additional protein and fat so you feel full until lunch after. These two variations are super easy and quick to make and packed with veggies for a nutritious weekday breakfast. To me spinach and goat cheese are a perfect match and parmesan cheese stands up well to arugula/kale.
Option 1:
- 2 eggs
- 1/4 cups of chopped/torn spinach
- 1/4 cup of mushrooms
- 1 thin piece of goat cheese
- 1-2 tbsps of water
- any other veggies you have on hand can be added - if you like cherry tomatoes they are a great option.
Option 2:
- 2 eggs
- 1/4 cups of chopped/torn aruguala/kale
- 1/4 cup of mushrooms
- 1 tbsp grated parmesan cheese
- 1- 2 tbsps of water
- any other veggies you have on hand can be added - if you like cherry tomatoes they are a great option.
Recipe:
- heat a small pan over high heat
- in a bowl scramble the two eggs, add the greens of choice, mushrooms, cheese, and if you want any other veggies.
- Add the water a tablespoon at a time to make it fluffier mixing as you do add the water
- Once the pan is hot spray with cooking spray and pour in the egg mixture
- Let the eggs start to cook so the bottom becomes more solid, gently pushing the edges in so the inside can run to the outside
- once the eggs are mostly cooked gently flip one half over the other
- flip onto the other side once fully cooked slide onto a plate and serve hot
